How do you Avoid HFCS?Current Lecture:High Fructose Corn SyrupBACKGROUND - Ancestral human sugar consumption was low now we eat about 1lb. of sugar a week. - NOT SUGAR! - HFCS 55% fructose 45% glucose (tastes sweeter to humans)- Not natural in society – is an American issue- HFCS is very cheap to produce! Made from corn in 1980’s there was to much corn so the US Gov. asked chemists in Japan to make corn into sugar. - Corn is highly subsidized – we give farmers money for corn even if it isn’t super profitable- Sugar sources: beets and cane - 1/10 cost of sugar- Consumption of soda is up 200% in 30 years.These notes represent a detailed interpretation of the professor’s lecture. Mexican Coke uses real sugar.- American’s expect food to be cheap and available – this is an American problem. Other countries use 40%+ on groceries- we get upset for just using 10%.- New NAME: CORN SUGAR- “Natural” means nothing in nutrition – “NATURAL” has no legal definition. - Americans view “natural” as HEALTHY – we will pay more for it.WHY IS IT USED SO OFTEN?- It mixes really easy – fruit juices- Extends shelf by 20% by inhibiting microbial spoilage – yogurt - Taste extra-sweet- Helps prevent freezer burn – ice cream- Helps baked products brown better – hot dog bund, English muffins- Results in soft textures – chewy cookies and protein bars- THIS IS AMAZING FOR PEOPLE WHO MAKE AND SELL FOODWHY IS IT BAD FOR YOU?- Causes flatulence and diarrhea- Your body is slow absorbing HFCS – 30% of US population suffer from fructose mal absorption- HFCS causes diarrhea and that adds to mineral deficiency (iron, magnesium, calcium, zinc)- Body doesn’t know how to absorb fructose- Metabolic syndrome – heart disease, diabetes, high blood pressure - HFCS uses mercury – caustic soda used to separate corn from kernel- Increased triglyceride levels – cardiac disease/cardiac arrest- Increased dental cavities- As you eat mercury it accumulates in your body because you don’t - Interferes with how effective your any birth control is!!!!!!!!!!!!- Link to obesity – unlike glucose, fructose does not enhance production of insulin, when your body produces insulin you know that you are full.- HFCS does not initiate this stimulus and so we keep eating and eating and eating- Higher levels of fatty liver – cannot function as well. - Another chemical that makes you feel full, leptin, are not produced with HFCS.HOW DO YOU AVOID HFCS?- Organic foods cannot contain HFCSo 10 cent difference- Eating whole foods and preparing food yourself- Eating fewer processed foods in
