focused on the essential nutrients required in only small quantities vitamins and minerals their sources as well as absorption and assimilation by the human tissues It includes cell biochemistry and physiology with the emphasis on vitamins and minerals integration in maintaining cell functions regulation of gene expression control of oxidative stress and DNA methylation support of the heart and time via email Rev 2019 12 19 3 NUTR620 Natalia Krupenko Spring 2024 Course Texts Course Format There is no required textbook All lecture PowerPoint materials will be posted on Sakai on the lecture date Content in PowerPoint is what students are tested on Additional readings such as paper PDFs may be provided to assist with learning or as additional resources Recommended but not obligatory Present Knowledge in Nutrition 10th edition Dr Krupenko has a copy and can loan it out The course format will include two lectures per week via Zoom as well as six Critical Thinking class sessions per semester Critical Thinking classes will consist of small group discussions case studies paper discussions and analysis of the public health literature NCDHHS Alerts In spring 2024 the University along with the rest of the world is living under post pandemic regulations There is a new variant of COVID 19 virus JN 1 spreading in the US Information about this variant and the recommendations can be information students should refer to Campus Health We will remain committed to a flexible mode of instruction providing in person and remote teaching by considering the course content and making an assessment about the best way to offer the content under specific circumstances All lectures and discussion classes including those conducted in person will be available via Zoom to students who have medical excuse tested positive for CoVID or stay under quarantine Additionally in a given week if we find that many students in the course are sick unable to attend or a presenter is unable to attend we may choose to offer the lecture via zoom only synchronously Please be alert for weekly announcements This semester for in person instruction all enrolled students are encouraged though not obligated to wear a mask covering one s mouth and nose in all UNC buildings This recommendation is to protect our educational community your classmates and instructors as we learn together For additional information see Carolina Together Safety Emergency Information Gillings When it is safe to do so we will call 9 1 1 and identify our building and room If there is an emergency we will stop teaching right away number as well as the issue There are some areas on campus such as indoors where you can t hear the Alert Carolina siren The first warning of an emergency may come to our attention via a messenger at the classroom door or through a personal electronic device If you see or experience something unusual or concerning before during or after class that may lead to an emergency please let me or another faculty member administrator or Gillings School security know as soon as possible Alert me even if you have only an inkling that something may not be right It is very important that an interior room on the lowest floor and stay away from windows In a medical mental health emergency please make space for first responders to do their work UNC Police Fire Department and EMS respond to all medical calls on campus In the case of fire do not attempt to carry anything in your hands Exit quickly in as orderly a way as possible Help others as much as possible In a situation in which one or more people intend to do harm assess the situation and make a decision Unfortunately there may not be a clear right answer However your circumstances may make one
