- 1 - NUTR 2030 Introduction to Principles of Human Nutrition MW 2:30-3:45 PM 174 Poole Agricultural Center Instructor: Mrs. Deborah A. Hutcheon, MS, RD, LD Office: Poole Agricultural Center 215 Office Hours: MW 4:00-5:00 pm, F 1:30-2:30 pm, or by appointment Office Phone: 864-656-2148 Email: [email protected] In addition to my scheduled office hours, I am willing to meet with students any time that my schedule allows. In order to be sure that I am available, I encourage students to contact me at least 24 hours in advance if they are interested in meeting with me outside of my regularly scheduled office hours as listed above. Students are always welcome to stop by my office to see if I am available. Please note that my teaching schedule prohibits me from meeting with students MWF from 12:00 noon to 1:30 pm. Email is the best way to reach me. I check my email frequently throughout the day and evening and will try to respond to questions in a timely manner. Please be aware that I do not own a smartphone and do have other obligations outside of Clemson (i.e., I am not connected to my email 24/7). I do not guarantee an immediate response to emails but do seek to respond within 24 hours of receipt. Students are welcome to contact me on my office phone (as provided above) when an urgent need arises. Like email, an immediate response to phone messages is not guaranteed, but I do seek to respond within 24 hours of receipt. Because of the volume of students that I am teaching this semester, when emailing or calling me please provide your name, course number, and course name to which your question/comment applies. Providing this information will facilitate a faster response. Course Description: Study of nutrient functions and requirements, food choices, dietary adequacy, and role of nutrition in physical fitness. Deals with social and scientific issues; health care policy; evaluation and interpretation of nutrition sources from government, private, academic, and the health care sectors. Course Learning Outcomes: Upon completion of this course, students will be able to: 1. General Education: Demonstrate an understanding of issues created by the complex interactions among science, technology, and society. (STS—Science and Technology in Society Requirement) 2. ACEND: Develop interventions that consider environment, food, nutrition, and lifestyle choices to affect change and enhance wellness (i.e., health promotion and disease prevention) in diverse groups and individuals across the lifespan. 3. IFT – Not Applicable 4. RCA – Not Applicable 5. Instructor  Evaluate the validity of nutrition information using the scientific method.  Plan a balanced diet that meets nutrient needs throughout the life cycle in accordance with current evidence-based dietary recommendations.  Evaluate food products and meal plans for nutrient content, health benefits, and health detriments.  Develop nutritional strategies to reduce hunger & malnutrition, promote health, and prevent disease.  Summarize the recommended dietary components to promote weight control and energy balance.  Identify food handling techniques to reduce the risk of food-borne illness.  Apply nutrition concepts through information and tools to lifelong learning and personal experiences.  Communicate respectful, science-based answers to consumer questions concerning emerging nutrition and health trends.  Create opportunities for students to grow in their educational endeavors, emphasizing Clemson’s STS requirement.- 2 - Required Text(s): Brown JE. Nutrition Now. 7th ed. Belmont, CA: Wadsworth-Cengage; 2014. Additional Supplies  Clemson’s Blackboard learning management system is heavily utilized in this course for outside class work, communication, and in-class online exam administration. Handouts coinciding with classroom discussions will be available on Blackboard. Students are encouraged to print the slide outlines that are provided through Blackboard and bring them to class for note taking.  A laptop with WiFi Internet access is required for taking course examinations in the classroom.  A basic calculator. A scientific calculator is not required. Course Requirements Textbook & Course Readings: In order to be thoroughly prepared to intellectually participate in classroom lectures and discussion, the student is expected to read and study the assigned pages prior to class. Quizzes & Exams: Unit exams are given in-class throughout the semester to assess the student’s understanding of the chapter content and lecture material. Although none of the module exams are technically cumulative, the content of the course builds upon itself so that the content of each subsequent module requires a working understanding of the content from the previous module. While students will not be specifically tested on material covered in a previous module, students will need to understand previously covered material to do well on subsequent exams. Exam questions may be multiple choice, fill-in-the blank, matching, true/false, or short answer. While chapter quizzes are not scheduled, the instructor reserves the right to give unannounced quizzes in class, which will be graded and count toward the final course grade. Diet Analysis Projects: Twice during the semester, the student will analyze his/her diet based on a comparison to both the Dietary Guidelines for Americans, 2010 and the Nutrient Intake Standards using the free online USDA SuperTracker program. Requirements and related forms will be accessible via Blackboard. Current Topics Discussion Essays: To facilitate student participation, to enhance critical thinking, to apply course content to current societal issues, and to assess student learning, throughout the semester the student will be responsible for participating in facilitated discussions regarding current nutrition topics in society. These discussion essays will be facilitated through Blackboard. The student should refer to Blackboard for individual discussion assignment requirements and grading rubrics. Unless otherwise specified in Blackboard, the following guidelines should be followed for each discussion essay.  Students are encouraged to formulate their responses outside of the Blackboard system using a word processing program, save their responses to their personal hard drive or external drive, and then copy and paste their final responses into Blackboard.
