An ester link is a bond in which an OH bond (hydroxyl) is replaced by an -O.saturated fats-no double bond. Its between C-H. Solid at room temp. the structure of a saturatedfat is straight chain. unsaturated fats- form a double bond between C’s. Liquid at room temp. The double bonded structure causes a bend in the chain. -monounsaturated: 1 double bond (oleic)-polyunsaturated: 2 or more double bonds ( binoleic). trans fat- trans arrangement of carbon atoms, adjacent to the double bonds. Phospholipid- 2 fatty acid chains plus a phosphate group. Has a hydrophilic head and a hydrophobic tail. Non-glycerol lipids- steroids (hydrophobic)-estradiol (girls)-testosterone- (boys)-cholesterol- pretty hydrophobic Protein- 50% or more of a cell’s dry weight.Structural proteins- collagen (skin), keratin (hair), dystrophin (muscle) Transport proteins- auqaporins and hemoglobin Proteins are made from polymers of amino acids. 1 alpha carbon and 4 bonds. 1 R group bond and an H on the opposite side.
